Homemade Jilebies

These Yummy jilebies are usually served as breakfast in North India with puri and spiced potatoes. In southeren India these will be served as dessert or snack..

Ingredients for the Batter :
1 Cup of Maida or All Purpose Flour
2 Tea spoons of Gram flour
1 Tea spoon of Sugar
1 Tea spoon of Oil
1 Tea spoon of Yeast
Less than 1 cup of Luke warm water

For Syrup:
2 Cups of Sugar
1 Cup of water
pinch of Cardamom poweder
Pinch of Saffron

Oil to deep fry
Preperation:

Prepare the batter with all the ingredients by adding little bit of water at a time, with out any lumps. The consistency of the batter should be like the dosa batter. Keep the batter in a warm place for 1 hr.

Prepare the sugar syrup. The syrup should not be very thick of very light.. and keep it warm

Take the batter and put it in a empty Ketchup bottle or some empty dressing bottle with a small whole on the lid.

Heat the Oil in a pan and make the jilebies in your favorite shape. Fry them till they are golden brown on a slow flame. When they are golden brown, take them and drain the excess oil and place them in the sugar syrup. Let them soak for couple of minutes and take the jilebies and store them in a container.
